Strawberry Salsa

Strawberry Salsa

INGREDIENTS:

  • 15 medium sized roma tomatoes
  • 1 pound fresh strawberries, diced
  • 1 green bell pepper, diced
  • 3 green chili peppers, diced
  • 1/2 large purple onion, diced
  • fresh squeezed juice of 1 lemon
  • 1 TB oregano
  • 1 tsp sea salt
  • 2 tsp red pepper powder
  • Boil a large pot of water. Add tomatoes tomatoes to boiling water for a few minutes.

    Remove tomatoes with a slotted spoon and transfer to a bowl of ice water until chilled.

    Mix all other ingredients in a large mixing bowl.

    Remove tomatoes. Slice off the tops where the stems were connected, turn upside down a nd gently squeeze into a separate bowl.

    All the tomato "guts" should just slide out and easily separate from the skins. Discard the skins. break up tomato guts into smaller pieces in the bowl.

    Drain the liquid from the tomatoes based on the consistency of the salsa you want. Add the tomatoes to the rest of the ingredients and mix well. Chill overnight to let the flavors set in. Drain excess liquid in the morning. Enjoy!
