Picnic Potato Salad
# Ingredients: 6 cups peeled, diced, cooked potatoes
# 1/3 cup lemon juice
# 1/3 cup chopped green onions
# 1/4 cup butter, melted
# 1 tablespoon chopped fresh dill, or to taste
# 1 teaspoon sugar
# 1 1/2 cups sliced celery
# 1 1/4 cups sour cream
# 3/4 cup chopped orange or red pepper
Directions:
Combine potatoes, lemon juice, onions, melted butter, dill and sugar; toss well. Microwave at high (100%) for 2 minutes or until warm. Cover and let stand 1 hour to blend flavors. Just before serving, stir in celery, sour cream, and chopped pepper. Add salt and pepper to taste. Yield: 8 servings.
