Coffee Cake

Ingredients
  • 4 - eggs, beaten
  • 2 - cups sugar
  • 1 - cup molasses
  • 1 - cup butter
  • 1 - cup strong, hot coffee
  • 4-1/2 - cups all-purpose flour, sifted
  • 1 - teaspoon baking soda
  • 1 - teaspoon cream tartar
  • 1 - teaspoon cloves
  • 1 - teaspoon cinnamon
  • 1 - teaspoon nutmeg
  • 1/2 - cup raisins, chopped
  • Directions

    Preheat oven to 350-degrees F.

    In a bowl, cream eggs and sugar. Then stir in the molasses and mix well.

    Melt butter in hot coffee and add to the egg mixture.

    Sift in to mixture the flour, soda, cream of tartar, cloves, cinnamon, and nutmeg.

    Mix the batter until smooth.

    Dredge raisins lightly with flour and fold in to the batter.

    Pour batter into a loaf pan and bake 60 minutes.
